I can probably help you out here, since one of the things that I did to my
XJ-S a few years ago was to add a mechanical water temp gauge with the
sender in the expansion tank!!  Since I added the same to the engine at
the right rear outlet to the cylinder head (that's right, two mechanical
water temp gauges in the car!), I have some experience with how the V12
reacts (my cooling system was/is in good shapr).

The expansion tank tends to run the same to a little hotter than the
engine.  The temp difference is greatest after, say, idling for a while
after a hard run in the summer.  The motor might have been running at 180,
but after idling the motor is at 190, and the temp of the expansion tank
slowly rises to 195 or 200.  Left alone, everything stabilizes at that
point.  SInce the expansion tank temp is always equal to or greater than
engine temp, it might be a good place to place your sensor.  

Also, since the expansion tank has the nice design feature of being in the
active flow of coolant, the temp within has more meaning than that of an
expansion tank located at the end of the line (most cars).  I mounted my
temp sender an inch or so off the bottom, nad that has worked OK.
