I worked until recently for the largest applied cryogenics company in the world (Oxford Instruments). Although I wouldn't reccomend it, you can dunk your whole hand into liquid nitrogen with no immediate harm. What happens is that the liquid instantly boils. The resulting gas has got low heat capacity and low thermal conductivity, so forms an insulating "glove" around your hand. Dropping the liquid onto your hand has the same effect - the boiling liquid essentially forms a gas bearing which stops the cold liquid getting to your hand. For removing warts, the liquid nitrogen is used to cool a metal stylus which is contacted with the wart. For the same reason, if you cool seats like this, don't touch them, because they WILL stick to skin as it freezes (just like an ice cube from the freezer will, except liquid N2 is much colder, 77K). I have used this technique to put a pulley on a shaft without a press. Shaft in liquid N2, pulley in domestic oven, drop shaft into hole in pulley, bingo!
