You have obviously never examined the state of a worn out fuel tank level sender! Stray wires everywhere, and the current from the heated bi-metal instrument is quite heavy too! So no worries, a thermistor in the sump would be perfectly safe. Or at least much safer than the fuel level sender you already have.
